Beef Tikka Masala Curry with Coconut Milk

The easiest way to make a curry! It is not completely from scratch because I used ready Tikka Masala paste but don't forget that most of my recipes are beginner-friendly. Whenever I don't have a dinner idea I usually go for curry because there are so many different types of curry you can make and they are all delicious. Some of them take 30mins to make and some of them much longer. However, I'm thinking about the cooking time and not the preparation. Preparation takes usually 15 minutes for all of them. In the end, I made my naan bread from scratch, however, I didn't document the process because I'm still working on making the perfect and easiest naan bread.


Ingredients:

  • beef I used 300g

  • 2 medium onions

  • 2 medium potatoes

  • 2 tablespoons of tomato paste

  • can of coconut milk

  • Tikka Masala paste (portion for 4 about 4 tablespoons)

  • half of courgette


Step 1



Chop the beef into bigger or smaller chunks (up to your preferences). Cut two medium onions into eight parts.


Step 2



Heat oil and make sure it's hot before you put the beef into it. Add onions, fry for about 10 minutes until brown, and add water, enough to cover the meat and onions. Cover it with a lid and cook until tender (I had plenty of time that day, so I cooked it for three hours). Remember to add more water when you see that it slowly disappears.


Step 3



Cut courgettes and potatoes like shown in the pictures, and add them to the pot.



Step 4



Add the curry paste, tomato paste, and coconut milk, and season the way you like it. I only added some salt because the paste itself gave a lot of flavour. Cook for another 10 minutes until the potatoes are soft.


Step 5


Cook, the rice. I always serve curry with jasmine rice because this is the one we like the most. In the end, I made the bread and all done! Enjoy! :)
